Chef De Cuisine, Brian Cole, originally from Sierra Leone, discovered his passion for cooking while assisting his grandmother in the kitchen during his childhood. After migrating to Australia, his culinary journey began in high school, where he excelled in cookery class and actively sought cooking opportunities. Through an apprenticeship and five years at an entertainment complex, Chef Brian honed his skills in various cuisines, crafting his unique style of contemporary Australian fusion. He artfully combines native ingredients, French techniques, and Asian flavours to create harmonious dishes.
With meticulous attention to cleanliness and organisation, Chef Brian ensures efficient operations in his kitchen. He takes immense pleasure in creating unforgettable dining experiences and personalised moments for guests, always aiming to make people happy through his exceptional culinary creations.

She continues to push boundaries with innovative wine pairings including Nebbiolo to accompany fish, orange wine to go with pork, and a chilled shiraz for octopus. Camila continues to update the wine list with new vintages and varieties and Hearth was inducted in the Hall of Fame after being awarded Hotel Wine List Award at the 2021, 2022 and 2023 at the AHA WA Accommodation Awards for Excellence.
Inspired by sustainable and biodynamic winemaking, Camila continues to support bespoke wineries and female leads in the region by showcasing unique wines paired with the finest local produce at Hearth Restaurant and The Ritz-Carlton, Perth.

With 18 years of industry experience, starting from humble beginnings as a dishwasher, Thomas discovered his passion for customer service through witnessing the transformative power of genuine care on guests' dining experiences. He believes that a thriving restaurant is built on a foundation of strong teamwork, where every team member's efforts and ideas are valued and contribute to success.
